The frittata has become a regular dish 'round here. The past few weekends, I've been exploring the cookbook more. We've recently made the Polenta Rancheros, Tofu Bennies, Banana-Nut Waffles, Gingerbread Waffles, and a few other things.

The Tofu Bennies were well worth the trouble. We served them atop spinach sauteed with tomato and garlic. Very, very good.

I don't have this one but I love the frittata recipe in Vegan With a Vengeance, which is probably similar. It's so easy and versatile.

Very much so. We've made it a bit easier by sauteeing the veggies in a cast iron pan, then mixing the tofu mix into them and baking it in the same pan. 1 dish less! I never saw the frittata recipe in VWaV, I'll have to look that up.

The frittata recipe in VWAV convinced me that I do not like saffron. Otherwise, it was good! Carry on...
